Heat the oil over a medium heat and add the onion, pepper and garlic and fry for a few minutes. - Stir in the chilli powder and fry for a further few minutes. - Stir in the mixed vegetables, chick peas, tomatoes and stock, season and stir well, cover and simmer gently for 20 minutes. - To serve, pile the spicy vegetables into the tortillas and finish with soured cream, grated cheddar and chopped coriander. |
